I’ve had this korean beef bowl recipe pinned on pinterest for a while which I’m sure many of you have seen. While it sounds amazing, I really wanted to try and make it healthier for my family. Since having tried the keto diet I’ve come to see how much sugar is in our food. I’ve been tweaking recipes here and there lately to lessen the sugar and processed carbs. I don’t hate bread but I’m really doing my best to make sure we have a balanced diet.
In replacement of sugar to the recipe I decided to use a korean pear. If you can’t find a korean pear in your supermarket, no worries! You can use any pear or even an apple. You could even use applesauce as well! After I swapped that out I decided to use turkey instead because that’s what we usually eat in this household. To make it vegan you could use a crumbled meat substitute or tofu which I might try out next time. We are not a vegan household but I do love to get my family to eat meatless as much as I can.
The beauty of this recipe is that it’s so simple and who doesn’t love that. You basically take your pear, garlic and ginger and throw it in a blender with a tablespoon or so of water. That goes into the pan along with some seasoned turkey and you are done. Top it off with your favorite veggies. I used soy sauce pickled cucumbers, beansprouts and carrots.
